Chicken with cashew nuts

Ingredients:
- 400g chicken, thinly sliced
- 2 tsp of vegetable stock powder
- 2 tsp of sugar
- 0,5 tssp of pepper
- 1 tbsp of vegetable oil
- 4 cloves of garlic, chopped or crushed
- 0,5 carrot, sliced
- 5 Chinese cabbage leaves, sliced into long strips
- 0,5 onion, thinly sliced
- spring onion, finely chopped
- 100g cashew nuts
Method:
Marinate chicken with 1 tsp of stock powder, 1 tsp of sugar for minimum of 30 minutes
Blanch the carrot and cabbage for 30 seconds
Heat the oil to medium-hot and add garlic. Stir for 30 seconds. Add chicken on top and stir 1 minute until it changes colour. Add onion, carrot, cabbage, 1stp of stock powder, 1 tsp of sugar, 0,25 tsp of pepper, cashew nuts. Cook all in for 10 minutes and garnish with spring onion.
