Chicken with cashew nuts

Ingredients:

  • 400g chicken, thinly sliced
  • 2 tsp of vegetable stock powder
  • 2 tsp of sugar
  • 0,5 tssp of pepper
  • 1 tbsp of vegetable oil
  • 4 cloves of garlic, chopped or crushed
  • 0,5 carrot, sliced
  • 5 Chinese cabbage leaves, sliced into long strips
  • 0,5 onion, thinly sliced
  • spring onion, finely chopped
  • 100g cashew nuts

Method:

Marinate chicken with 1 tsp of stock powder, 1 tsp of sugar for minimum of 30 minutes

Blanch the carrot and cabbage for 30 seconds

Heat the oil to medium-hot and add garlic. Stir for 30 seconds. Add chicken on top and stir 1 minute until it changes colour. Add onion, carrot, cabbage, 1stp of stock powder, 1 tsp of sugar, 0,25 tsp of pepper, cashew nuts. Cook all in for 10 minutes and garnish with spring onion.
