I got this recipe from a friend met during the Russian invasion of Ukraine when he stayed in the same place as I did. Despite simple ingredients it's absolutely delicious - don't skimp on the carrots, they give the rice a nice colour and amazing taste.

Ingredients:

  • Rice
  • Carrots
  • Onions
  • Meat (pork or chicken)
  • Sunflower or cottonseed oil

Method:

  1. Peel the onions and carrot
  2. Dice the onions and cut the carrots into rather thick sticks
  3. Chope the meat, add salt
  4. Add oil into a thick bottom vessel, heat up and fry the meat until it's golden. This is a fairly important step - you really want the meat to look properly browned.
  5. Add onions and when it changes colour to golden, add carrots.
  6. Cover and cook on low flame for about 7-10 minutes.
  7. Add water to cover all ingredients in the pot, add salt.
  8. Boil until the carrot is soft.
  9. Add rice and add water until it's approximately 3cm above the rice level. Add salt.
  10. The water should be hot and buzzing, boil until the rice soaks up the water. 
  11. Lower the flame to a minimum, cover with a lid and a towel and leave for 20 minutes.
