I got this recipe from a friend met during the Russian invasion of Ukraine when he stayed in the same place as I did. Despite simple ingredients it's absolutely delicious - don't skimp on the carrots, they give the rice a nice colour and amazing taste.
Ingredients:
- Rice
- Carrots
- Onions
- Meat (pork or chicken)
- Sunflower or cottonseed oil
Method:
- Peel the onions and carrot
- Dice the onions and cut the carrots into rather thick sticks
- Chope the meat, add salt
- Add oil into a thick bottom vessel, heat up and fry the meat until it's golden. This is a fairly important step - you really want the meat to look properly browned.
- Add onions and when it changes colour to golden, add carrots.
- Cover and cook on low flame for about 7-10 minutes.
- Add water to cover all ingredients in the pot, add salt.
- Boil until the carrot is soft.
- Add rice and add water until it's approximately 3cm above the rice level. Add salt.
- The water should be hot and buzzing, boil until the rice soaks up the water.
- Lower the flame to a minimum, cover with a lid and a towel and leave for 20 minutes.
