Besan cake

A cake made from chickpea flour. Quoted recipe modified to yield a bigger portion. 

Ingredients:
  • 6 medium-large tart-sweet apples
  • 330g chickpea flour
  • 4 teaspoons baking powder1
  • 1 teaspoon fine sea salt
  • 125g unsalted butter, melted
  • 2 cups sugar
  • 2 large egg
  • 2 teaspoon vanilla extract
  • 0,5 cup milk
Method:
  1. Preheat the oven to 180°C. Line a square metal baking pan with parchment paper, leaving an overhang where possible. 
  2. Peel, core, and slice the apples on a grater or manually. 
  3. In a small bowl, whisk together all the ingredients quickly, making sure to not over-mix. Toss in the apples and mix them together.  Bake for 25-50 minutes.
